Ben and I had to stop by the store on the way home and he saw the freezer full of ice cream sandwiches. He asked if we could make them at home and I told him, absolutely!
So. . . TA-DA!! Vanilla ice cream on a Vanilla Chip Cookie Sandwich! They were scrumptious!!
I used a typical chocolate chip cookie recipe but used the Ghiradelli White Chips (which are made from vanilla - no cocoa!) instead of chocolate chips. The Breyers All Natural Vanilla Ice Cream is a staple around here, so I just scooped that between two cookies. I'm to the point where I can make cookie dough in about five minutes, and bake them while we're eating dinner.
And the end result is so much better than that stuff in the grocery freezer.
